There’s something especially satisfying about turning a handful of fresh herbs into something simple and delicious, and this herb flatbread is one of those recipes that feels almost effortless. It starts with our homemade pizza dough—the same one you already know and love—but instead of building a traditional pizza, this version lets the garden take center stage. No tomato sauce, just fresh herbs, good olive oil, and a quick bake that brings everything together beautifully. Perfect and light for appetizers or a light summer meal.
Ingredients
- Pizza Dough – head on over to our Montegatta Farm pizza dough recipe. Or, for an even faster meal, you can use some store bought dough. (but fresh is not intimidating and is sooo yummy)
- 1/4 Cup olive oil
- 2 cloves of minced garlic, to your taste
- Several handfuls of snipped herbs – we like basil, thyme, oregano, Italian parsley and chives. Rosemary and sage also work, but use sparingly, as they can be strong.
- Optionally you can add extras such as balsamic vinegar, arugula, figs, prosciutto, olive tapenade or hot honey!
Instructions for Herb Flatbread
Begin by preparing your dough as usual and roll it out very thinly to your preferred shape. While the dough rests for a moment, step into the garden and gather whatever herbs are thriving. Basil, thyme, oregano, and chives are all perfect here, but this is a flexible recipe—use what you have and what smells good in your hands. Finely chop the herbs and add them to a small bowl with olive oil and a bit of minced garlic. Whisk everything together until it becomes a fragrant, herb-infused oil.
Brush the mixture generously over the surface of your rolled-out dough, making sure to cover edge to edge. The oil will soak slightly into the dough while the herbs rest on top, creating a simple but flavorful finish. Slide the flatbread into your preheated grill or oven at 450°F+ and bake for about 5 minutes, or until the edges are golden and the bottom is crisp.
What comes out of the oven is something wonderfully rustic—crisp, aromatic, and full of fresh garden flavor. Slice the herb flatbread and serve warm as an appetizer, alongside a salad, or just on its own with a little extra olive oil for dipping.
